Breakfast pies are a big trend right now, and not without good reason! They are tasty and easy to make. What about a delightful pie with bacon and cheese to get your day started? But breakfast pies can also take a lighter approach: make them using healthy fruits, veggies, and whole grains for a wholesome boost in the morning.
The good thing about breakfast pies is that you can make so many different kinds with your own favourite ingredients. You can make them spicy and hearty or light, sweet, and fruity. Here are three excellent breakfast “pies” that you can try out. The first one is a hearty Cheesy Breakfast Pie that’s guaranteed to be a top favourite for your family. The second one is a super healthy no-bake Fridge Oats Cherry Pie. For our third one, we spice things up a bit with an awesome Mexican Breakfast Pie that’s gluten-free!

Preheat oven to 200°C.
Start by cooking the bacon. Once finished, place the bacon on a paper towel and let it absorb some of the oil. Cut the cooked bacon into small pieces and set aside.
Take a medium bowl and mix eggs, Bisquick baking mix, milk, salt, and pepper with 3 of the bacon pieces (chopped) and ½ cup cheddar cheese. Whisk the mix until well-combined.
Pour the mixture into a medium (25cm) baking pan.
Evenly pour the hashbrowns on top of the mixture.
Take the remaining cheddar cheese and bacon and top the mixture off.
Bake the pie for 20–25 minutes until golden brown.
Serve warm and enjoy!

Take your mug or drinking glass and layer it from the bottom up with the uncooked oats, then the milk, followed by the chia seeds, honey and almond butter, and the Greek yoghurt. Put the cherries on top.
Cover the mug, put into the fridge, and leave overnight.
Uncover and enjoy!

Preheat oven to 190°C.
Into a large skillet, add butter, onions, and peppers; saute for 2–3 minutes over medium heat.
Add the ground sausage and beef. Cook for 5–7 minutes until slightly brown. Crumble the meat with a potato masher or fork.
Add taco seasoning, ½ tsp salt, and ¼ tsp pepper; stir.
Take a medium bowl and combine the salsa, corn, and black beans; stir.
Take a 30 x 20cm pan or casserole dish and spray with non-stick cooking spray.
Into the baking pan layer half of the meat mixture, half of the salsa/corn mixture, half of the tortilla quarters, and half the cheese. Repeat all layers, except for the last layer of cheese.
Take a large bowl and mix in the eggs, ¼ cup milk, ½ tsp salt, and ¼ tsp pepper. Whisk thoroughly.
Pour the egg mixture over the layers and top off with the remaining shredded cheese.
Bake for 45–55 minutes until golden brown.
Serve with green onions, cilantro, and avocados on the side. You can also add extra salsa.
