If you are looking for a way to keep your juice as fresh as possible, then try freezing it. Freezing has been shown to be a very effective way of locking in the nutritional content of fruit and vegetables, ensuring your juice is packed full of goodness no matter when you drink it.
Freezing has always been an area of contention for some, as they believe it can take away from the goodness of fresh produce, and goes against the idea that it should be eaten as soon as it is out of the ground. Whilst true on some levels, freezing is actually a very handy way to keep your juice fresh, and here is why.
If juice is not consumed quickly after being pressed its nutritional and enzyme content rapidly deteriorate. When you freeze freshly pressed, unpasteurised juice, you lock in its goodness, halting this deterioration. The reason people can sometimes worry about freezing their juice is because freezing vegetables can alter the way its vitamins act. Freezing makes vitamins much more vulnerable to heat, such as when you blanch or boil your frozen vegetables. This heat can rapidly degrade the integrity of frozen vitamins, making them almost useless.
However, this doesn’t need to be a worry with freshly pressed, raw juice. Your juice has never, and should never be exposed to heat, meaning the vitamin content of the juice never actually takes any damage. Once frozen, everything is locked in place at the current level of nutritional value. And when you want to drink it, all you have to do is pop it in the fridge and let it thaw. It is by far the most efficient way of ensuring your juice stays as healthy and nutritious as it possibly can.
Although technically possible, there is little point in freezing standard store bought juice. This is because store bought juice is pasteurised before it is sold. This is a process in which the juice is heated up to kill any potential bacteria in it. However, the down side to this is that it also kills off most of its nutritional value, even before you have bought it – making freezing it have little value.
So, as you can see, there is definitely an advantage to freezing your freshly pressed slow juice if you don’t plan to drink it right away. As you don’t ever heat it, it should never get damaged. It is just a handy way to ensure your juice stays fresh and healthy for as long as it can.
